Now that I’ve found her blog, I already have a recipe I hope to duplicate in my own kitchen. Summer is way to hot to always eat hot so a great pasta salad is something I can’t wait to try. The power of simple sweet potatoes! These nutrient-packed puppies are always in my pantry or on the grocery list. They make an amazing meal, side dish, or dessert! Extra tip – leave the skin on! It’s packed with extra potassium and fiber. ? My favorite way to cook them these days is to throw them in the crock pot on low for 5-7 hours and they’re perfectly tender. What’s your favorite way to enjoy sweet potatoes? ?
